What happens to breakfast, lunch and dinner for a Gluten Free, mostly Dairy Free Family of 6 when you tear apart your kitchen? How in the heck do you feed the "Zoo" while you do not have cabinets or counters? Well, This happened to me! I thought, "Perfect time to convert everyone to a Raw Food Diet!" Nice thought! I should have thought of that BEFORE they took out the sink and dishwasher: I had not cleared the leftovers out the fridge. So, that left no room for fresh veggies.
Lucky for them, I am not that ambitious, nor do I
usually buy fruits and veggies that are out of season. They are more expensive, they have come from far away, and they don't taste as fresh and yummy. What does work is that the fruits and veggies that are in season, can be stored inside or outside right now. What is also fortunate is that my pantry (if you can call it fortunate), is located in the hallway, and my stove and fridge are still in the kitchen.
Since we live in a small town and we are gluten free, there isn't much of a choice, but to still eat at home. I could buy things to throw in the microwave, I could buy a bunch of special GF pre-packaged things, but I refuse! Only the "necessary" ones, like noodles. So I tried to make things as simple as possible.
What I kept on hand:
*Pan for boiling water w/lid
*Strainer *Sharp Knife
*Large Spoon *CuttingBoard
*Frying Pan w/lid *Peeler
*Spatula *Manual Can Opener
*Vita-mix/Blender *Salt & Pepper
*2 Cup Measure-All (Pampered Chef tool ;it
measures dry and liquid and is compact)
*A couple of Storage Containers
*Plastic Tub to put dirty dishes in
*Dish Soap, Sponge and Dish Towel
*Whatever you use to clean off your stove-top
What a mess! I am really hoping that everything
that I have chosen is going to look fabulous!
We definitely have to get the fridge up right; it leans alitt le to the right.
*Sturdy Paper Plates and Bowls (if you want to wash less or are eco-friendly)
*Plastic Utensils and Cups (Same as above)
*Paper Towels and Napkins
*Wine or Xanax - Just Kidding - What you need to keep on hand is some essential oils to give you Balance and Serenity
*Quick Vegan Pad Thai
*Huge Salad w/ lots of Veggies
*Spaghetti and Salad
*Rice with Vegetables (use frozen for ease) I topped this with a "cream" sauce and used Basil and Oregano Oils for flavor - using a toothpick with a light amount of oil and stirred into the cream.
*Rice w/Enchilada Sauce wrapped in Romaine
Lettuce top w/ your favorite Mexican Flair
*Progresso has GF Soups (not too expensive)
