This has to be my most favorite salad ever. My family even agrees! Since I am not an awesome photograper, and I only have a simple camera, I do the best I can with what I have. So hopefully the pictures make it look yummy enough to try! This served about 4 of us.
Ingredients:
1/2 ea Red, Yellow, Orange, and Green Pepper
1/2 Large Cucumber
2 Green Onions
Handful of Grape Tomatoes (sliced in half)
Small chunk of Red Onion
1 Avocado
2 Small Heads of Green Leaf Lettuce or more!
As you can see, I sliced up all the peppers, and I quartered the cucumbers, diced the whole green onion, halved the tomatoes and cut crescent slices out of the red onion. I forgot about the avocado until just before we served it. The thing that makes this puts the "icing on the cake" so to speak is the fabulous dressing! No Dairy, No Refined Sugar, just good ole yumminess. I must mention though, not low-fat. This dressing recipe was slightly adapted from one on All Recipes. This makes a good amount of dressing. We usually have a small amount left over, usually just enough for one salad the next day.

Cilantro-Lime Dressing
Ingredients:
1 Cup Grapeseed Oil or Light Tasting Olive Oil
1/2 Cup Fresh Squeezed Lime Juice
4 tsp. Balsamic Vinegar
1/3 - 1/2 Cup Honey (adjust to your liking)
1 Large Clove Garlic or 2 Small (coarsely chopped)
1/2 inch Fresh Ginger slice (coarsely chopped)
3/4 Cup Packed Fresh Cilanto (stems and leaves)
1 tsp Salt
1 - 2 Jalapeno (optional)
Put all the ingredients EXCEPT the Oil into the blender. I have a Vita-Mix. Love Love it!! Blend until smooth. Take the little lid off the top of your blender and as you have the blender on medium-ish, pour your oil in a steady stream so that it emulsifies in with the rest of the ingredients. I tweak my recipes all the time so I encourage you to add more honey if needed, less salt if you want so you can add more later if needed etc. I have used the jalapeno, I have used 1/2 of the jalapeno, and I have left it out. No matter what, it is still yummy! ENJOY
