Trying to take pictures of food requires more skills and a better camera than I have! Sheesh. Good thing the food tastes good = ) Trying to make food while the kitchen is under construction can sure be a pain. I couldn't find my food processor and I think I was out of regular cocoa so I had to get creative to satisfy my chocolate craving for the night, and use the dark stuff. Here it is:
Ingredients:
1 Avocado
2 T Dark Cocoa or Cacao
2 - 3 T Honey
4 T Almond-Coconut Milk
1 1/2 t Vanilla Extract
Pinch of Salt
Tiny bit of Peppermint Oil
Crushed Organic Candy Cane
I used my Magic Blender (since I couldn't find the food processor) and mostly because I don't like digging the pudding out of the Vita-Mix - What a pain! Blend everything together until smooth, light and fluffy. Sprinkle with crushed Candy Cane. This recipe doesn't make a ton. Two small servings at the most.
When the kitchen is back to the usual, I will do my milk chocolate pudding recipe, and make more of it.

This pic contains carob instead of the dark chocolate I used. Yesterday I mistook the carob for cocoa, BLECK = P. So, I had to try again today - Much better results. Comment on some of your food accidents.
